Tabouli salad or Tabbouleh is a simple Mediterranean salad of very finely chopped vegetables, lots of fresh parsley and bulgur wheat, all tossed with lime juice and olive oil.
I was inspired to recreate this recipe because one of its star ingredient – parsley – is great for liver support. Last week, I had a routinary health appointment. As you all know, health is one of the things that I prioritize that’s why I always see to it that I look up ways on how to keep my family’s health in check. With colon cancer at high risk in my family, taking care of myself at a young age will in return hope that I have stay healthy too.
What is in Tabouli Salad?
The true star in a tabouli recipe is the very finely chopped parsley–lots of it! Parsley holds well against the citrus in the dressing; that’s why tabouli is even better the next day. Some tabouli recipes like this one, call for a few fresh mint leaves and green onions, while others use only parsley and red onions instead. Feel free to modify as you please!

Tabouli Salad
Equipment

Ingredients
- ½ cup bulgur wheat
- 15-20 pcs baby tomatoes (or 4 roma tomatoes)
- 1 pc English cucumber
- 2 bunches parsley part of the stems removed, washed and well-dried
- 12-15 pcs fresh mint leaves stems removed, washed, well-dried
- 4 pcs green onions
- 3-4 tbsp lime juice (lemon juice, if you prefer)
- 3-4 tbsp extra virgin olive oil
- salt (to taste)
Instructions
- Add bulgar and water into the Stack Cooker and cook in the microwave for 10 minutes.
- Using the Power Chef, chop the parsley and mint into small pieces by pulling the cord. Set aside.
- Chop the cucumbers into small pieces. Place in the Power Chef and pull cord until it's been chopped into smaller pieces.
- Dice your tomatoes as well as green onions and combine together with parsley, mint, and cucumbers.
- Squeeze lemon onto the salad, add extra virgin olive oil, and salt to taste. Add in bulgar. Mix until well combined.
- Serve and enjoy!
